Hello my boo’s!
Today I’m back with another ‘what I eat in a day vegan edition’, hurray!
Even though this year started out with not so many vegan days, I’m definitely getting a little more on it now, so without rambling on for too long, let me show you what I ate on my most recent vegan day.

Breakfast
Tesco Free From Choco Snaps & vegan milk!

Need I say more? I have this breakfast virtually everyday. So yum!
Lunch
Peanut butter on toast.
Ah the joy that peanut butter is vegan! So good. I love peanut butter- smooth for me, it’s so delicious. I like it in a sandwich, or as I had it here on toast. This is a great little lunch or snack to have depending on your appetite because of the protein.
Dinner
Vegan curry using rice, sweet potato, carrot, spinach, chickpeas, Plant Chef tikka sauce and vegan naan


Woo. I finally made my vegan curry inspired by the one I order from my local pub you know, when lockdown life isn’t a thing. I adore this curry, and I’ve wanted to make my own homemade version for ages.



I’d give my take on it a strong 7 out of 10. I felt there were parts that were a little bit soggy, and it wasn’t 100% however it was still good and I’d definitely make it again whilst tweaking the recipe / way we cook it a little. Yep, because when I said ‘I finally made my vegan curry’, really I meant my Dad lol. Bless him, I knew I’d have to call in his help with this one but the little superstar pretty much did it all. Next time I’ll definitely input WAY more, I love cooking.
Snacks
Raisins
Banana
Waffles and ketchup
Lentil chips
Vegan Ben and Jerry’s chocolate fudge brownie ice cream – this stuff is a solid 8/10!!! I love my chocolate ice cream, and if I didn’t know better I might not even know this was vegan. So good!
Drinks
Water.
Fanta lemon.
Vegetable water – I tried this after cooking my vegan curry, we saved the water we cooked the spinach in, apparently it’s supposed to be so good for you. It didn’t taste too bad but I wish I’d had it when it was hot, not after it had cooled down.
Strawberry and Kiwi water
and there you have my ‘what I eat in a day vegan edition’ number three!
Writing these posts definitely motivates me to have more vegan days, so I’m sure there’ll be more of these in the future. Perhaps I’ll have another vegan day at the weekend! What meals should I make?

Yummy I like that tikka sauce. I think we usually add ‘chicken’, cauliflower and pepper in the curry, serve with rice and a flatbread that we make😊 xx

WOW, yall have vegan ben and jerry’s WHAT!? that is so nice! I wish we had vegan options readily here urgh! And my favourite vegetable is definitely brussel sprouts!

Yes!! Its so good too it tastes great for a vegan ice cream!! I hope you guys catch up with more options soon- I’m sure you probably have vegan options that we don’t!! Wow I have never had brussel sprouts! My dad loves them too that is so interesting 😍 thanks for commenting lovely xx

The Birdseye potato waffles are literally my LIFE hahaha, I eat them every day !! So happy they’re vegan 😩 most of the waffles I eat are all vegan which makes me so happy! X

peanut butter on toast is sooo good!!! have you ever had rice cakes?? i typically use them instead of bread sometimes and add banana , so so delish!! 😛
aahhh curry is so great, i still haven’t found a vegan one yet ;(
i’m still struggling to find a good vegan ice cream, i’ve tried B&J’s cherry garcia but it didnt wow me, as for chocolate ones, the ones i’ve tried were far too chocolatey for me, LOL

It is isn’t it!! Yess I have rice cakes sometimes, I used to eat them for lunch everyday with only marmite so I’ve kind of gone off them now lol, they are good with cheese though!! And seriously they’re much healthier I think? Or at least less calories than bread that’s why I used to only have those!! I will try them with banana one day if you recommend for sure!!!

Ooh I’ve not tried this cherry garcia, I’ve never even heard of this flavour. So far the B&J’s one is the best I’ve found. I hope you find your perfect one soon!

Nice!! I like them because they’re much lighter than bread in my opinion? And unfortunately I am not eating much dairy as it seems I’m intolerant lol but I am still looking into vegan cheese and cream cheese. That’s another way I eat them, spread cream cheese on them topped with fresh fruit like sliced strawberries or blueberries. And for lunch, spread avocado and topped with cherry tomatoes lol
Mackenzie introduced me to that cherry Garcia flavor, it seems like it’s hard to find because my grocery store doesnt have it in stock all the time.

Ooo, it looks like your curry turned out really well! We just had some today, too (not vegan though lol). 🙂 I have never heard of Potato Waffles before?! How interesting. Are they like hashbrowns or more sweet like waffles?!
I’d love to try Lemon Fanta even though & I don’t really drink soda. I’ve never seen that flavor before! & I must be the only one in the world who doesn’t like the Vegan B&J’s ice cream?! I’ve even tried that exact flavor before!
