I always love sharing my vegan what I eat in a day posts, so it’s a surprise that this is actually only my fourth one. I definitely expect to be sharing more of these in the next couple of months as I find them so fun to write / create… it makes me consider what I’m eating more as of course I want to share my best vegan recs for you, and this is also a great way for me to branch out and try different meals as I’m inspired to share plenty of exciting food! For me, sharing my vegan what I eat in a day posts really brings me joy, and I find it inspires me to get more creative with what I’m eating… so I’m definitely looking forward to shaking it up a little in the next few weeks, I think I’m going to have to check out some recipes 😉
Quick disclaimer – I’m not a vegan (yet). I’m a vegetarian who eats vegan food 90% of the time – most of my meals are vegan and I rarely eat cheese (I’ve been gradually cutting this out more and more, though I do consume on occasion… I’d like to get it down to nil though – of course I will be having vegan cheese but that’s different because it’s vegan hehe), for me – meals are fine but it’s the snacks and treats that I’m not alternating completely just yet. However, I like to eat vegan as much as possible, so of course I love having my full vegan days – hence these posts. I’m looking forward to trying more and more vegan treats too, so stay tuned because I have a few posts planned where I review and rate different vegan treats and goodies which I’m really excited about!!!
LOL at how I said quick disclaimer and it ended up being a whole paragraph, but we ride.

What I Eat In A Day Vegan Edition #4
Breakfast – Tesco Free From Choco Snaps with Almond Milk


This is my go to vegan breakfast, I have always been a cereal lover and genuinely look forward to my bowl of cereal in the AM. I find it to be so refreshing with the cold milk and everything hehe. These Tesco Free From Choco Snaps are a great vegan cereal, obviously similar to coco pops just less chocolatey. Still so good though, I have these pretty much every day. Normally I’d have coconut milk, but this time I had almond milk because it’s what we have in the fridge atm hehe. Both are good but I’d probably recommend coconut milk more as it’s a little sweeter, so goes with sweet yummy cereal more.
Lunch – Vegan Cheese toastie with grated violife cheese, spinach, sweetcorn, vegan pesto and garlic

Honestly my favourite meal ever at the moment, I am OBSESSED with my vegan cheese toasties, in fact, I think I may have to have one after I write this. They’re so good. I like to spice up my toasties a little for the flavour so instead of just having a vegan cheese toastie (using Violife cheese which I think my girl Dannii recommended – she is the vegan Queen) I add a few other ingredients to go with and of course, to pack in that extra nutrients. I’d usually have onion with this toastie as well but at the time of making it, I wasn’t aware that I had any LOL.
Important side note: Violife cheese is the best vegan cheese I have discovered!!! I wouldn’t have it on its own cold, but it’s great for that melted cheesy addition with meals such as cheese’burgers’, spaghetti bolognaise etc etc. The perfect cooking ingredient!
Another important side note: Just putting this out there when it comes to pesto if you’re vegetarian / vegan make sure you’re getting the pesto which clearly states it’s suitable for vegetarians / vegans. I was eating pesto for months as a vegetarian without realising it contained animal derived ingredients, so of course when I found out I made sure to check going forward that what I was getting was actually vegan / veggie. Honestly, I had no idea that some pesto isn’t actually even vegetarian so I just wanted to share that, as you may not be aware just like I wasn’t! Also what I love about vegan pesto is how it’s still soooo yummy, pretty much exactly the same as non vegan / veggie pesto (from what I remember) if not a little yummier so I think even if you’re not vegetarian or vegan but you’re looking for a way to cut down on your meat consumption / want to lessen the amount of animal derived ingredients you consume then this is such a great place to start by simply switching out a product to a vegan alternative which tastes just as good, if not better!

Dinner – Spaghetti Bolognaise using plant based ‘mince’ from VivEra, with Italian herbs, tomato sauce, onion and garlic


Anyone else LOVE garlic? That flavour!!!!!! Mmmm. Spaghetti Bolognaise has always been one of my favourite meals, and I absolutely love this plant mince from VivEra, it’s so good. To be honest, I cooked this meal myself and normally my Dad cooks for me (hehe princess), I need to brush up on my cooking skills becauseee I know if my Dad made it it would have tasted so much nicer, this for me was almost a bit soggy lol I need to work on my timings more when it comes to boiling the pasta etc. Never mind, still a good meal, will be better when I learn how to cook properly x
Side note: It was ‘soggy’ because of the way I overcooked the pasta / possibly overcooked or undercooked the plant mince – not because of the actual ingredients / dish! When my Dad makes this meal for me, I enjoy it more!
Snacks
Grapes – Yum!
Melted Vegan Caramelised Hazelnut Galaxy with Strawberries –

Double yum. I love the crunch this galaxy has to it, to be honest, I’ve never really had it fresh as a bar, I usually melt this or make my own little spin on this by melting the chocolate and adding strawberries, then freezing so it goes solid again, so good (okay I’ve literally done this once but I will be doing it again hehe, stay tuned for following vegan posts)

I really enjoyed putting this post together and sharing with you my meals and treats from one of my vegan days. I am so looking forward to sharing more of these posts soon and to creating more vegan focused blog posts with recommendations and reviews! Oh my godd you make me want to eat all vegan twinnie!! I’ve tried a few vegan restaurants and LOVED them. I’m such a cereal snacker, and that cereal and milk combo look delish!!! Honestly everything sounds/looks so good- especially that basil pesto omg yum!!! I love these posts, it makes me want to go out there and experiment with more vegan options!! 🙂

I’m obsessed with Alpro! It’s the only milk I ever use, we always have a bunch stocked in our fridge hehe. I love these posts / this little series of yours !! xx

I LOVE these posts! Cheese is so hard! It has gotten a LOT better, but vegan cheese unless cooked or baked, on its own is hard to consume, in my opinion. The cheese you found looks SO yummy! As does that chocolate bar. I love anything hazelnut!
Thanks for sharing! I so miss New York for all the food restaurants. Candle 79 and Blossom were two of my favorite restaurants and they were vegan! I hope you are having an amazing weekend! ❤
